  • 2 to 4 pieces boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon lemon juice (optional) For added brightness
  • Fresh herbs for garnish (optional)

Preparation

  • Prepare your slow cooker by lightly greasing the inside with cooking spray or a little olive oil.
  • Place the chicken breasts at the bottom of the crockpot.
  • In a bowl, mix the chicken broth, olive oil, minced garlic, onion powder, garlic powder, thyme, rosemary, salt, and pepper. Stir in lemon juice if desired.
  • Pour this mixture over the chicken breasts, ensuring they are well coated.

Cooking

  • Cover the slow cooker and set it to low. Cook for 6 to 8 hours or until the chicken is tender and fully cooked. Alternatively, set it to high for 3 to 4 hours.
  • Once cooked, remove the chicken from the slow cooker and let it rest for a few minutes before slicing or shredding.
  • Optionally, use the cooking liquid to create a sauce by bringing it to a simmer in a saucepan, allowing it to reduce slightly, then drizzle over the chicken before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months. Allow to thaw in the refrigerator overnight before reheating.
