  • Chicken Breasts or Thighs 4-6 pieces
  • Garlic 3-4 cloves, minced
  • Chicken Broth 1 cup
  • Olive Oil 2 tbsp
  • Fresh or Dried Herbs such as thyme, rosemary, or oregano—1 tsp each
  • Salt and Pepper to taste
  • Optional Vegetables e.g., carrots, onions, potatoes—1-2 cups

Instructions
 

Prep the Chicken

  • Start by patting the chicken dry with a paper towel. This will help the seasonings stick and ensure a nice texture once cooked. You can use chicken breasts or thighs, depending on your preference.

Season the Chicken

  • Rub both sides of the chicken with olive oil, then season generously with salt, pepper, and your choice of herbs. Make sure each piece is well-coated with the seasonings.

Place the Chicken in the Slow Cooker

  • Lay the seasoned chicken in the bottom of the slow cooker. If you’re adding vegetables (carrots, onions, potatoes), place them around the chicken for added flavor. They’ll soak up all the delicious juices as it cooks.

Add Garlic and Broth

  • Sprinkle the minced garlic over the chicken and pour the chicken broth around it. The broth will keep the chicken moist and create a flavorful base for the meal.

Cook on Low

  • Cover the slow cooker and set it to cook on low for 6-7 hours. If you’re in a rush, you can set it to high for 3-4 hours, but the chicken will be more tender if cooked on low.

Check for Doneness

  • After the cooking time is up, check the chicken. It should be fork-tender and easily shred with a fork. If it needs a bit more time, continue cooking in 30-minute intervals until it's perfectly done.
