Ingredients
  

Main Ingredients

  • 2 pounds stew meat (beef)
  • 4 pieces carrots, chopped
  • 3 pieces potatoes, diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions
 

Preparation

  • Prepare your vegetables and meat.
  • In your slow cooker, place the 2 pounds of stew meat, the chopped carrots, diced potatoes, chopped onion, and minced garlic.

Mixing the Broth

  • In a separate mixing bowl, whisk together the 4 cups of beef broth, the 2 tablespoons of tomato paste, 1 teaspoon of dried thyme, and 1 teaspoon of dried rosemary. Add salt and pepper to taste.
  • Pour the broth mixture over the meat and vegetables in the slow cooker.

Cooking

  • Cover your slow cooker and cook on low for 8 hours or high for 4 hours.
  • Taste and adjust seasoning as needed before serving.

Serving

  • Ladle the stew into bowls, ensuring each serving includes a portion of meat and veggies.
  • Garnish with fresh herbs if desired.
