Ingredients
  

For the Stew

  • 2 pounds stew meat (like chuck or round)
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced
  • 1 piece onion, chopped
  • 2-3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 piece bay leaf
  • 2 tablespoons olive oil For browning the meat

Preparation

  • Heat the olive oil in a skillet over medium heat.
  • Add the stew meat and brown on all sides for about 5-7 minutes.
  • Transfer the browned meat to the slow cooker, scraping any juices into it.
  • Add the sliced carrots, diced potatoes, chopped onion, and minced garlic to the slow cooker and stir to combine.

Adding Liquids and Seasoning

  • Pour in the beef broth and add the tomato paste.
  • Sprinkle in the thyme, salt, and pepper, and add the bay leaf.

Cooking

  • Cover the slow cooker and cook on low for about 8 hours or on high for about 4 hours.
  • Check the meat and vegetables for tenderness before serving.
  • Remove the bay leaf before serving.

Notes
