Ingredients
  

Meat

  • 2 pounds beef stew meat Cut into even chunks for even cooking.

Vegetables

  • 4 pieces carrots, sliced
  • 3 pieces potatoes, diced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced

Broth and Seasoning

  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons Worcestershire sauce
  • 1 piece bay leaf

Instructions
 

Preparation

  • Gather all your ingredients including beef stew meat, carrots, potatoes, onion, and garlic.
  • Cut the beef into even chunks, wash and chop the carrots, dice the potatoes, and mince the garlic.

Combine Ingredients

  • Place the beef stew meat at the bottom of the slow cooker.
  • Layer sliced carrots, diced potatoes, chopped onion, and minced garlic on top.

Make Broth Mixture

  • In a separate bowl, whisk together beef broth, tomato paste, dried thyme, salt, black pepper, Worcestershire sauce, and bay leaf.

Cook

  • Pour the broth mixture over the meat and vegetables in the slow cooker.
  • Cover and cook on low for 8 hours, or on high for about 4 hours.

Serve

  • Once cooking is complete, taste and adjust seasoning if necessary.
  • Remove the bay leaf before serving and ladle stew into bowls.
  • Serve hot, optionally with crusty bread.

Notes

For thicker stew, mix a tablespoon of cornstarch with cold water and add 30 minutes before serving. Customize with your favorite veggies or spices.
