  • 3 to 4 pounds beef brisket Look for a well-marbled cut.
  • 2 tablespoons olive oil For searing the brisket.
  • 1 large onion, sliced For flavor base.
  • 4 cloves garlic, minced Enhances the aroma.
  • 2 cups beef broth For cooking.
  • 1 cup beef stock Adds richness.
  • 1 tablespoon tomato paste For depth of flavor.
  • 2 tablespoons brown sugar Balances flavors.
  • 1 tablespoon Worcestershire sauce For umami flavor.
  • 1 tablespoon smoked paprika Adds smokiness.
  • 1 tablespoon ground cumin Enhances the spice profile.
  • 1 teaspoon salt For seasoning.
  • 1 teaspoon black pepper For seasoning.
  • 2 bay leaves Add for aroma and flavor.

Instructions
 

Preparation

  • Pat the brisket dry with paper towels and season it generously with salt and pepper on all sides.
  • Heat the olive oil in a large skillet over medium-high heat. Once hot, sear the brisket for about 4-5 minutes on each side until browned.
  • Transfer the brisket to your slow cooker.
  • In the same skillet, add the sliced onion and cook until softened, about 3-4 minutes. Then add the minced garlic and cook for another minute.

Cooking

  • Pour the beef broth and beef stock into the skillet, scraping up any browned bits from the bottom. Stir in the tomato paste, brown sugar, Worcestershire sauce, smoked paprika, and ground cumin. Mix well.
  • Once combined, pour the mixture over the brisket in the slow cooker. Add the bay leaves on top.
  • Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the brisket is fork-tender.

Serving

  • Remove the brisket and let it rest for about 15 minutes before slicing. Discard the bay leaves.
  • Serve the cooking liquid as sauce over the sliced brisket.

Notes
