Ingredients
  

For the Sweet Potatoes

  • 4 pieces sweet potatoes Medium-sized, firm sweet potatoes

For the Sloppy Joe Filling

  • 1 lb lean ground beef or ground turkey Choose based on dietary preferences
  • 1/2 piece yellow onion, finely diced
  • 1 piece red bell pepper, finely diced
  • 1 tablespoon minced garlic
  • 1 piece jalapeño, seeds removed and very finely diced Adjust to taste for spice level
  • 1 tablespoon tomato paste
  • 1/3 cup ketchup
  • 1/4 cup water
  • 2 teaspoons brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 1/4 teaspoons chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper Adjust to taste for spice level
  • 3 tablespoons green onion, for garnish Sliced, for topping

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash the sweet potatoes thoroughly and poke holes all over each potato with a fork.
  • Place the sweet potatoes on a lined baking sheet or oven-safe pan.

Baking the Sweet Potatoes

  • Bake the sweet potatoes in the preheated oven for about 45 minutes, or until soft and fork-tender.

Cooking the Filling

  • In a non-stick skillet over medium-high heat, cook the ground beef or turkey until browned, about 6-8 minutes.
  • Add in the onion and red bell pepper, cooking until the onion is translucent, about 5-7 minutes.
  • Lower the heat to medium and add the jalapeño and minced garlic, cooking for an additional 2 minutes until fragrant.
  • Stir in the tomato paste, ketchup, water, brown sugar, Worcestershire sauce, salt, smoked paprika, chili powder, and cayenne pepper. Mix thoroughly.
  • Allow the mixture to simmer for about 5 minutes.

Assembling the Dish

  • Remove the sweet potatoes from the oven and carefully cut each one down the center, scooping out some flesh to make room for the filling.
  • Fill each sweet potato generously with the sloppy joe mixture.
  • Garnish with sliced green onions.

Serving

  • Serve the Sloppy Joe Sweet Potatoes hot from the oven.
