Ingredients

For the Sloppy Joe Filling

  • 1 pound ground beef or ground turkey
  • 1 small onion, diced
  • 1 each bell pepper, diced
  • 1 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Biscuit Topping

  • 1 package refrigerated cheddar bay biscuit mix
  • 3/4 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef or turkey until fully cooked, breaking it apart as it cooks. Drain any excess fat.
  • Add the diced onion and bell pepper to the skillet. Sauté for about 5 minutes until the vegetables are tender.
  • Stir in the ketchup, brown sugar, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Let the mixture simmer for about 5 minutes while stirring occasionally.
  • In a separate bowl, combine the biscuit mix, shredded cheddar cheese, and milk. Stir until just combined, being careful not to overmix.
  • Transfer the meat mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • Drop spoonfuls of the biscuit mixture on top of the meat mixture until it covers it.

Baking

  • Bake for 25-30 minutes, or until the biscuit topping is golden brown and cooked through.
  • Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions if desired before serving.

Notes

For extra cheesy biscuits, sprinkle more shredded cheddar on top just before baking. Leftovers can be stored in the refrigerator for 3-4 days or frozen for longer storage. Let simmer longer for enhanced flavor, and customize with favorites like jalapeños for a spicy kick.
