  • 1/4 cup soy sauce – 60 g
  • 1/4 cup sesame oil – 60 g
  • 2 tablespoons brown sugar – 25 g
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/2 teaspoon Korean red pepper flakes gochugaru
  • 1 tablespoon rice vinegar
  • 2 tablespoons sesame seeds
  • 1/4 cup green onions chopped – (25 g)

Instructions
 

Prepare the Brisket:

  • Start by slicing the brisket thinly against the grain. Thin slices ensure even cooking and help the beef absorb the marinade better, while thick slices can be tough.

Make the Marinade:

  • In a large bowl, combine soy sauce, sesame oil, brown sugar, minced garlic, ginger, gochujang, rice vinegar, and mirin. Stir until the sugar dissolves, creating a smooth, flavorful marinade that balances sweet, savory, and spicy notes.
