  • 4 pieces chicken thighs, bone-in and skin-on
  • 1/4 cup mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon sriracha adjust for heat preference
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • as needed Vegetable oil for cooking
  • to taste Chopped green onions for garnish

Instructions
 

Prepare the sauce

  • In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, soy sauce, minced garlic, lime juice, salt, and pepper. Stir until smooth.

Cook the chicken

  • Heat vegetable oil in a skillet over medium-high heat.
  • Season chicken thighs with salt and pepper.
  • Place chicken thighs in the skillet, skin side down, and cook undisturbed for 5 to 7 minutes until the skin is golden brown.
  • Flip the chicken thighs, reduce heat to medium, and brush with the prepared sauce. Cook for an additional 10 to 15 minutes until the internal temperature reaches 165°F (75°C).

Finishing touches

  • Remove from heat and let the chicken rest for a few minutes. Garnish with chopped green onions.

Notes

For best results, ensure the skillet is hot before adding chicken. Allow the chicken to rest after cooking for moist meat. Adjust heat level by varying sriracha in the sauce.
