Simply Delicious Chicken and Dumplings

Ingredients
  

Main Ingredients

  • 1 whole rotisserie chicken (white and dark meat shredded, skin removed) A time-saving ingredient that adds flavor.
  • 12 oz frozen mirepoix blend (celery, carrots, and onion)
  • 1/4 cup fresh parsley (finely chopped) For garnish and added flavor.
  • 6 cups chicken broth Low-sodium option is recommended.
  • 1 can cream of chicken soup

Dumpling Ingredients

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup whole milk Can be microwaved with melted butter.
  • 4 tablespoons unsalted butter (melted)

Seasoning

  • 2 tablespoons unsalted butter For sautéing the vegetables.
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt For seasoning the dumplings.
  • 1/2 teaspoon black pepper

Instructions
 

Preparation

  • Melt 2 tablespoons of unsalted butter in a large stockpot over medium-high heat.
  • Add the frozen mirepoix blend, chopped parsley, Italian seasoning, garlic powder, smoked paprika, thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Sauté for about 3-4 minutes.
  • Stir in the cream of chicken soup and chicken broth, mixing well to combine.
  • Add the shredded rotisserie chicken and bring to a low boil. Reduce heat to a simmer.

Dumpling Preparation

  • In a large bowl, whisk together 2 cups of flour, 4 teaspoons of baking powder, and 1 teaspoon of salt.
  • In another bowl, combine 3/4 cup of whole milk and melted butter.
  • Pour liquid into the flour mixture and stir until a smooth ball of dough forms.

Cooking

  • Drop dumpling dough into the simmering stew, using a cookie scoop to add 15 dumplings.
  • Cover the pot and simmer for 25 minutes without peeking.
  • Remove the lid and serve hot, garnished with fresh parsley.

Notes
