Ingredients
  

For the Chili

  • 1 pound boneless, skinless chicken breast, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil for sautéing
  • 2 cups chicken broth
  • 1 can (4 ounces) diced green chilies
  • 1 can (14 ounces) coconut milk or heavy cream
  • 2 cups cauliflower florets, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ½ teaspoon pepper

Toppings

  • Fresh cilantro, for garnish
  • Avocado slices, for topping

Instructions
 

Cooking

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until the onion becomes translucent.
  • Add the diced chicken to the pot. Cook for about 5–7 minutes until the chicken is no longer pink.
  • Stir in the cauliflower florets, chicken broth, diced green chilies, coconut milk (or heavy cream), cumin, chili powder, oregano, salt, and pepper. Mix well.
  • Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 20–30 minutes, allowing the flavors to meld and the cauliflower to soften.
  • Check the seasoning and adjust if necessary.
  • Serve hot, garnished with fresh cilantro and avocado slices.
