Ingredients
  

Sauce Ingredients

  • 1 block silken tofu or soft tofu (300g) For the best texture
  • 2 tbsp oil For sautéing
  • 1 onion diced
  • 4 cloves garlic minced
  • 2 tbsp nutritional yeast Adds cheesy flavor and B vitamins
  • 2 tbsp lemon juice
  • 1 tsp miso paste
  • 1/2 tsp salt More to taste

Serving

  • Pasta (to serve, according to package instructions) Choose your favorite type
  • Fresh parsley Optional, for garnish
  • Vegan parmesan Optional, for topping

Instructions
 

Preparation

  • Bring a pot of water to a boil for cooking the pasta. Follow package instructions for cooking.
  • Reserve about half a cup of pasta water for adjusting the sauce's consistency.

Cooking the Sauce

  • In a pan, heat the oil over medium heat.
  • Add diced onion and sauté until soft and translucent, about 5 minutes.
  • Add minced garlic and sauté for an additional 30 seconds until fragrant.
  • Remove the pan from heat and transfer the onion and garlic to a blender.
  • Add silken tofu, nutritional yeast, lemon juice, miso paste, and blend until smooth, adjusting with reserved pasta water if needed.

Combining

  • Once pasta is cooked, drain it (do not rinse) and return it to the pot.
  • Pour the silken tofu sauce over the pasta and mix thoroughly to coat.
  • Season with additional salt and pepper to taste.

Serving

  • Garnish with fresh parsley and vegan parmesan if desired before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to three months. Reheat gently, adding water if needed.
