Ingredients
  

Shrimp and Vegetables

  • 1 pound cooked shrimp, peeled and deveined Use medium to large shrimp for best results.
  • 8 pieces rice paper wrappers High-quality wrappers recommended.
  • 1 cup lettuce leaves, shredded Fresh and crisp.
  • 1 cup carrots, julienned Add color and crunch.
  • 1 cup cucumber, julienned Adds freshness.
  • 1 cup red bell pepper, thinly sliced For sweetness and color.
  • ½ cup fresh mint leaves Adds a refreshing flavor.
  • ½ cup fresh cilantro leaves For flavor enhancement.
  • ½ piece avocado, sliced For creaminess.
  • to taste dipping sauce of your choice Peanut sauce, sweet chili sauce, etc.

Instructions
 

Preparation

  • Prepare your workspace by laying out all the ingredients in an organized manner. Have a shallow dish filled with warm water ready for the rice paper.
  • Dip one rice paper wrapper into the warm water for about 10-15 seconds until it softens but does not become too mushy.
  • Lay the softened wrapper flat on a clean surface.
  • Layer the fillings: place a small amount of lettuce, followed by a few pieces of shrimp, carrots, cucumber, bell pepper, mint leaves, cilantro, and a slice of avocado in the center of the wrapper.
  • Fold the sides of the rice paper over the filling, then roll the bottom up towards the top, tucking everything in tightly as you go.
  • Repeat the process with the remaining wrappers and filling until all rolls are made.

Serving

  • Serve immediately with your favorite dipping sauce or refrigerate until ready to serve.

Notes
