Ingredients
  

Main Ingredients

  • 8 ounces rice noodles Soaked in warm water
  • 1 pound medium shrimp, peeled and deveined Fresh or thawed
  • 2 tablespoons vegetable oil For stir-frying
  • 2 cloves garlic, minced Adds flavor
  • 1 cup bean sprouts Fresh
  • 1 cup shredded carrots Adds crunch
  • 1 large egg, lightly beaten For added protein and texture
  • 4 individual green onions, chopped For garnish
  • ¼ cup chopped peanuts For garnish
  • ¼ cup fresh cilantro, chopped For garnish
  • as needed lime wedges For serving

Sauce Ingredients

  • 3 tablespoons fish sauce Base of the sauce
  • 2 tablespoons sugar To balance flavors
  • 1 tablespoon soy sauce For umami flavor
  • 1 tablespoon tamarind paste For tanginess
  • ½ teaspoon red pepper flakes Adjust to taste

Instructions
 

Preparation

  • Soak the rice noodles in warm water for about 30-40 minutes or until tender. Drain and set aside.
  • In a small bowl, whisk together the fish sauce, sugar, soy sauce, tamarind paste, and red pepper flakes to create your sauce. Set aside.

Cooking

  • Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  • Add the shrimp to the pan and stir-fry for 2-3 minutes or until they turn pink and opaque. Remove the shrimp from the pan and set aside.
  • In the same skillet, add the soaked noodles and pour the sauce over the top. Stir-fry for about 2 minutes, allowing the noodles to absorb the sauce.
  • Push the noodles to one side of the pan and add the beaten egg on the other side. Scramble the egg until fully cooked, then mix it with the noodles.
  • Add the bean sprouts, shredded carrots, and cooked shrimp back to the pan. Toss everything together for another 2-3 minutes to heat through.
  • Stir in the chopped green onions and remove from heat.

Serving

  • Garnish each serving with chopped peanuts, fresh cilantro, and lime wedges.

Notes

To elevate your dish, use fresh shrimp and consider adding extra toppings like fresh chili or cucumber. For leftovers, store in an airtight container and reheat gently.
