  • 2 cups shredded cooked chicken Use leftover rotisserie chicken for convenience.
  • 1 can black beans, drained and rinsed Canned beans save prep time.
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 onion, diced Adds flavor to the chili.
  • 2 cloves garlic, minced Enhances the flavor profile.
  • 1 tablespoon chili powder Essential for chili flavor.
  • 1 teaspoon cumin Adjust for spiciness.
  • Salt and pepper to taste Season as desired.

Optional Toppings

  • cheese Shredded cheese for melting on top.
  • sour cream Adds creaminess.
  • cilantro For a burst of freshness.

Instructions
 

Preparation

  • Gather all your ingredients on a clean countertop.

Cooking

  • In a large pot or slow cooker, combine the shredded chicken, black beans, kidney beans, diced tomatoes, and chicken broth.
  • Add the diced onion and minced garlic to the mixture.
  • Add the chili powder, cumin, salt, and pepper. Stir well to combine.
  • If using a slow cooker, cook on low for 6-8 hours or on high for 3-4 hours.
  • If using a pot, bring to a simmer and cook for about 30 minutes, stirring occasionally.
  • Once cooked, taste your chili and adjust the seasoning if necessary.

Serving

  • Serve hot with your choice of toppings.

Notes
