Ingredients
  

For the Fajitas

  • 1 pound large shrimp, peeled and deveined Fresh or sustainably sourced frozen shrimp
  • 2 pieces bell peppers, sliced (red, green, or yellow)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime For drizzling
  • Fresh cilantro, for garnish
  • Tortillas, for serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the shrimp, bell peppers, onion, and minced garlic.
  • Pour olive oil over the mixture, then add chili powder, cumin, paprika, salt, and pepper. Toss everything together until the shrimp and veggies are evenly coated.
  • Spread the shrimp and vegetable mixture evenly on a large sheet pan.

Cooking

  • Bake in the preheated oven for 10-12 minutes, or until the shrimp turn opaque and the vegetables soften.
  • Remove the pan from the oven and drizzle with lime juice. Toss to combine, then garnish with fresh cilantro.
  • Serve warm with warmed tortillas.

Notes
