Instructions
Preheat your oven to 400°F (200°C).
Peel and cube the sweet potatoes, then toss them with olive oil, salt, pepper, and minced garlic in a large bowl.
Slice the sausage into bite-sized pieces and add to the bowl, mixing everything together.
Spread the sweet potatoes and sausage mixture evenly on a sheet pan.
In a small bowl, mix honey with a pinch of salt, then drizzle over the sausage and sweet potatoes.
Roast in the preheated oven for 25-30 minutes, tossing halfway through for even cooking.
Once done, garnish with fresh parsley before serving.
