  • 1 lb crab meat Fresh crab meat is recommended for the best flavor.
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup butter Melted over medium heat.
  • 1/2 cup chopped onion
  • 1/2 cup sliced celery
  • 1/2 cup chopped bell pepper
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour To thicken the soup.
  • 1 teaspoon Old Bay seasoning For traditional coastal flavor.
  • to taste N/A Salt and pepper Adjust according to preference.
  • to garnish N/A Chopped parsley For serving.

Instructions
 

Preparation

  • In a large pot, melt the butter over medium heat.
  • Add the chopped onion, celery, and bell pepper; sauté for about 5 minutes until softened.
  • Add minced garlic and cook for another minute.
  • Sprinkle in the flour and stir continuously for about 2 minutes.
  • Gradually whisk in the seafood stock and bring to a gentle simmer.

Cooking

  • Stir in the heavy cream and fold in the fresh crab meat.
  • Sprinkle in the Old Bay seasoning, and season with salt and pepper to taste.
  • Let the soup simmer for an additional 10 to 15 minutes to meld the flavors.

Serving

  • Ladle the hot soup into bowls and garnish with chopped parsley.
  • Serve with crusty bread and a lemon wedge on the side.
