Shaved Steak Stir Fry

A quick and delicious stir fry made with thinly sliced beef, fresh vegetables, and a flavorful sauce.

Ingredients
  

  • 1 pound shaved steak (flat iron, filet mignon, or sirloin work best)
  • 1 tablespoon cornstarch
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 1 bunch asparagus (trimmed and chopped)

Instructions
 

  • Toss the thinly sliced steak with cornstarch and let it sit for about 10 minutes.
  • Mix soy sauce, ginger, garlic, salt, pepper, and brown sugar in a bowl to create a marinade.
  • Coat the steak with half of the marinade.
  • Heat olive oil in a large pan over medium-high heat. Add the steak and sear for 2 to 3 minutes per side until browned. Remove and set aside.
  • Add asparagus and green onions to the same pan. Stir-fry for 2 to 3 minutes until just tender.
  • Return the steak to the pan, add the remaining marinade, and cook for another 1 to 2 minutes until the sauce thickens slightly.
  • Remove from heat and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat gently.
