For the Filling

  • 4 large potatoes, peeled and diced Starchy varieties like Russets are recommended.
  • 1 cup vegetable broth
  • 1 cup heavy cream Can be substituted with plant-based alternatives.
  • 1 cup shredded cheese (cheddar or your preference) Try blends like sharp cheddar and Gruyère.
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped
  • 1 pre-made pie crust Or homemade if preferred.
  • 1 cup cooked vegetables (optional, such as spinach, carrots, or peas) Add at the mixing stage if desired.
  • 2 cloves garlic, minced Roasted garlic can enhance the flavor.
  • 1 medium onion, finely chopped

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened, about 5 minutes.
  • Add the diced potatoes to the pot, followed by the vegetable broth. Bring to a boil, then reduce to a simmer. Cover and cook until the potatoes are tender, about 15 minutes.
  • Once the potatoes are tender, mash them in the pot until smooth. Stir in the heavy cream, cheese, salt, pepper, thyme, and parsley. Fold in cooked vegetables if using.
  • Roll out your pie crust and fit it into a greased pie pan. Pour the potato mixture into the crust, smoothing the top with a spatula.

Baking

  • Place the pie in the oven and bake for 30-35 minutes, or until the crust is golden brown.
  • Remove from the oven and let it cool for 10 minutes before slicing and serving.
