  • 1 tablespoon olive oil For sautéing.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic. Sauté for about 3 to 5 minutes until softened and translucent.
  • Crumble in the ground beef and cook for 5 to 7 minutes, stirring occasionally until browned.
  • Incorporate the diced potatoes into the pot.
  • Add the green chiles and diced tomatoes (including their juices) to the pot.
  • Pour in the beef broth and season with cumin, salt, and pepper. Stir well.
  • Bring the stew to a boil, then reduce heat to low. Cover and simmer for about 30 minutes.
  • Check the potatoes for doneness. If fork-tender, serve hot.
