  • 1 lb sausage Preferably Italian or spicy.
  • 4 pieces potatoes Diced, Yukon Gold or Russet work well.
  • 1 piece onion Chopped.
  • 3 cups chicken broth Forms the soup's base.
  • 1 cup heavy cream For creaminess and richness.
  • 2 cloves garlic Minced.
  • Salt and pepper To taste.
  • Chopped green onions Optional, for garnish.

Preparation

  • Heat a large pot over medium heat and add the sausage.
  • Break apart the sausage with a spoon as it cooks and brown it thoroughly for about 5-7 minutes.
  • Add the chopped onions and minced garlic, stirring to combine. Cook until onions are translucent, about 3-5 minutes.
  • Add the diced potatoes and chicken broth, stirring well. Bring the pot to a boil.
  • Once boiling, reduce heat to low and let the soup simmer for about 15-20 minutes until potatoes are tender.
  • Stir in the heavy cream and season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with chopped green onions if desired.

Notes

For lighter soup, consider using half-and-half instead of heavy cream. Add spinach or kale for extra nutrition.
