Ingredients
  

  • 12 ounces Italian sausage mild or spicy
  • 8 ounces pasta penne, rigatoni, or spaghetti
  • 1 cup diced tomatoes fresh or canned
  • 0.5 cup onion finely chopped
  • 2 cloves garlic minced
  • 0.5 cup heavy cream or tomato sauce depending on preferred sauce style
  • 2 tablespoons olive oil
  • to taste salt and freshly ground black pepper
  • for garnish fresh basil or parsley

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Remove sausage from casing if needed, crumble into skillet, and cook until browned and slightly crispy.
  • Add chopped onions and minced garlic to the skillet. Cook until onions are translucent and fragrant, about 3–4 minutes.
  • Stir in diced tomatoes and simmer until sauce thickens and flavors meld.
  • Pour in heavy cream or tomato sauce. Stir well and cook for a few minutes to develop a rich texture.
  • Add cooked pasta to the skillet. Toss to coat evenly with sauce.
  • Season with salt and pepper to taste. Garnish with fresh basil or parsley before serving.
