Ingredients
  

Main Ingredients

  • 1 lb Italian sausage (sweet or spicy)
  • 4 cups fresh kale (curly or Lacinato)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 2 medium potatoes (diced)
  • 2 medium carrots (sliced)
  • Salt (to taste)
  • Black pepper (to taste)
  • Crushed red pepper flakes (to taste)
  • Thyme (to taste)
  • Bay leaves (optional)

Instructions
 

Cooking

  • Heat a generous splash of olive oil in a large pot over medium heat.
  • Add the Italian sausage and break it apart with a spatula. Cook until the sausage is browned (5-7 minutes).
  • Stir in the diced onion and minced garlic, and sauté until the onions are translucent (3-4 minutes).
  • Add the sliced carrots and diced potatoes, stir, and cook for an additional 3-4 minutes.
  • Pour in the chicken broth, season with salt, black pepper, crushed red pepper flakes, thyme, and bay leaves. Bring to a boil.
  • Lower the heat and let it simmer gently for about 20 minutes.
  • Fold in the fresh kale and let it simmer for an additional 10 minutes.

Serving

  • Ladle the soup into bowls, ensuring each serving has sausage, veggies, and broth.
  • Garnish with freshly cracked black pepper and additional crushed red pepper flakes if desired.

Notes

For a thicker consistency, purée a portion of the soup and return to the pot. You can also substitute kale with other greens like spinach or collard greens.
