Main Ingredients

  • 1 pound sausage (your choice of type) Choose a flavor you love.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced
  • 1 medium carrot, diced
  • 1 rib celery, diced
  • 4 cups chicken broth Can substitute vegetable broth for a vegetarian version.
  • 1 can diced tomatoes (14.5 ounces)
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 2 cups kale or spinach, roughly chopped Either can be used.
  • Olive oil, for cooking Use as needed for sautéing.

Instructions
 

Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Add the sausage and cook until browned, about 5-7 minutes, stirring occasionally to break it up.
  • Once browned, add the diced onion, carrot, and celery to the pot. Cook until the vegetables soften, around 5 minutes.
  • Stir in the minced garlic and cook for about 1 minute until fragrant.
  • Add the diced sweet potatoes, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
  • Cover and let it simmer for 20-25 minutes or until the sweet potatoes are tender.
  • Stir in the chopped kale or spinach and cook for an additional 5 minutes until the greens are wilted.
  • Taste the soup and adjust the seasoning if needed. Serve hot.

Notes

For serving, consider pairing with crusty bread or a light salad. Optionally, top with fresh herbs, cheese, truffle oil, or Greek yogurt. Leftovers can be stored for up to 4-5 days in the refrigerator or frozen for up to 3 months.
