  • 12 pieces Medjool dates Choose fresh dates for best texture.
  • 1 cup Samoa cookies Crushed for stuffing.
  • 1/2 cup Shredded coconut Toast for extra flavor if desired.
  • 1/2 cup Dark chocolate chips For drizzling.
  • 1 tablespoon Coconut oil To melt with chocolate.
  • 1/4 teaspoon Sea salt For sprinkling on top.
  • 1/2 cup Chopped nuts Optional, use for added crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Slice the medjool dates lengthwise to open them, removing the pit if necessary.
  • Blend the Samoa cookies and chopped nuts (if using) in a food processor until finely crumbed.
  • Incorporate the shredded coconut into the Samoa cookie mixture and combine well.
  • Stuff each date with the Samoa cookie mixture, pressing down lightly to ensure the filling stays inside.
  • Place the stuffed dates on the prepared baking sheet, spacing them out evenly.

Baking

  • Bake in the oven for about 8-10 minutes until slightly golden, keeping an eye on them to avoid burning.
  • Meanwhile, melt the dark chocolate chips and coconut oil together in a microwave or double boiler, stirring until smooth.
  • Remove the stuffed dates from the oven and let them cool slightly.
  • Drizzle the melted chocolate over the cookies and add a pinch of sea salt on top.
  • Allow the chocolate to set before serving.
