  • 1 cup unsalted butter, softened Should be softened, not melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup honey Use high-quality honey for best flavor
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour You could substitute some with whole wheat flour for a nuttier flavor
  • 1 teaspoon baking powder Adjust for high altitude
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt Use less if using salted pistachios
  • 1 1/2 cups shelled pistachios, chopped Consider toasting for enhanced flavor
  • to taste flaky sea salt, for topping

Instructions
 

Baking Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat the softened butter with granulated and brown sugars until light and fluffy, about 3-5 minutes.
  • Add honey, eggs, and vanilla extract, and beat until thoroughly combined.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined.
  • Fold in the chopped pistachios ensuring they are evenly distributed.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie, and flatten them slightly.
  • Sprinkle a small pinch of flaky sea salt on top of each cookie.

Baking

  • Bake for 10-12 minutes or until the edges are lightly golden and the centers look set.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
