Preparation

  • Heat a splash of oil in a large pot over medium heat.
  • Add in the diced onion, sliced carrots, and sliced celery. Sauté until softened, about 5 minutes.
  • Stir in the minced garlic and cook for an additional minute.
  • Pour in the chicken broth and bring to a gentle boil.
  • Add the egg noodles and cook according to package instructions until al dente, about 6 to 8 minutes.
  • Stir in the shredded rotisserie chicken and season with salt and pepper.
  • Allow to simmer for a few more minutes to blend flavors and heat the chicken through.
  • Serve hot and garnish with fresh parsley.
