Ingredients
  

  • 2 lbs. sweet potatoes cut into 2-inch pieces
  • 2 Tbsp. olive oil or canola oil
  • 1 tsp. salt
  • ¾ tsp. ground pepper
  • 2 Tbsp. garlic finely chopped (about 8 cloves)
  • 2 Tbsp. fresh parsley chopped

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Lightly spray a baking sheet with cooking oil.
  • In a large bowl, toss the diced sweet potatoes with olive oil, salt, pepper, and chopped garlic until evenly coated.
  • Spread the sweet potatoes out in a single layer on the baking sheet.
  • Roast in the oven for 45-55 minutes, flipping halfway through, until fork-tender and crispy.
  • Once out of the oven, taste and adjust seasoning if necessary, then sprinkle with fresh parsley before serving.
