cut into 2-inch pieces

olive oil or canola oil

garlic
finely chopped (about 8 cloves)

fresh parsley

Instructions
Preheat your oven to 400°F (200°C).
Lightly spray a baking sheet with cooking oil.
In a large bowl, toss the diced sweet potatoes with olive oil, salt, pepper, and chopped garlic until evenly coated.
Spread the sweet potatoes out in a single layer on the baking sheet.
Roast in the oven for 45-55 minutes, flipping halfway through, until fork-tender and crispy.
Once out of the oven, taste and adjust seasoning if necessary, then sprinkle with fresh parsley before serving.
