  • 2 large sweet potatoes Firm, smooth, and bright orange
  • 2 tablespoons olive oil For coating the sweet potatoes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ cup crumbled feta cheese Can be substituted with goat cheese or ricotta
  • 2 tablespoons honey Can substitute with maple syrup

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the sweet potatoes. Slice them into rounds about ½ inch thick.
  • In a large bowl, combine the sweet potato rounds with olive oil, salt, black pepper, and paprika. Toss to coat each piece evenly.
  • Arrange the coated sweet potato rounds in a single layer on a baking sheet lined with parchment paper. Ensure the pieces do not overlap for even roasting.

Cooking

  • Roast in the preheated oven for 20-25 minutes, or until the edges are crispy and golden, flipping halfway through for even cooking.
  • Remove the sweet potatoes from the oven and sprinkle with crumbled feta cheese while they are still warm.
  • Drizzle honey over the sweet potato rounds.
  • If desired, garnish with fresh parsley before serving.
