Roasted Peaches with Vanilla Ice Cream

- 4 pieces ripe peaches Select ripe but firm peaches for best results.
- 2 tablespoons brown sugar Can substitute with honey or maple syrup.
- 1 teaspoon cinnamon Additional cinnamon can be sprinkled on top for garnish.
- 2 tablespoons butter
- 1 scoop vanilla ice cream Coconut ice cream is a good alternative.
- fresh mint leaves as needed Fresh mint leaves Optional, for garnish.

Preparation
- Preheat your oven to 375°F (190°C).
- Wash the peaches thoroughly and slice them in half, removing the pit.
- Place the peach halves in a baking dish, cut side up.
- Sprinkle brown sugar and cinnamon evenly over the peach halves.
- Dot each peach half with a bit of butter.
Baking
- Bake in the oven for about 15-20 minutes, or until the peaches are tender and caramelized.
- Remove the peaches from the oven and let them cool slightly.
Serving
- Serve each warm peach half with a scoop of vanilla ice cream on top.
- Optionally, garnish with fresh mint leaves for an added touch of flavor.
