Ingredients
  

For the Pizza

  • 1 piece pizza dough (store-bought or homemade)
  • 1 cup cooked chicken, shredded
  • 1 cup mozzarella cheese, shredded Fresh mozzarella preferred for best melting
  • ½ cup ricotta cheese
  • 1 head of garlic For roasting
  • 2 tablespoons olive oil Divided use
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper (optional) For added heat
  • Fresh basil leaves for garnish

Instructions
 

Preparation

  • Preheat your oven to 475°F (245°C).
  • Prepare the garlic by slicing the top off the head of garlic, exposing the cloves. Drizzle with one tablespoon of olive oil and sprinkle with a pinch of salt and pepper. Wrap the garlic in aluminum foil and roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized.
  • While the garlic roasts, roll out your pizza dough on a floured surface to your desired thickness. Transfer it to a pizza stone or baking sheet lined with parchment paper.

Assembly

  • Once the garlic is ready, squeeze the cloves out of their skins into a small bowl. Mash them with a fork to create a smooth paste. Mix in the ricotta cheese, one tablespoon of olive oil, and a pinch of salt and pepper.
  • Spread the garlic-ricotta mixture evenly over the pizza dough.
  • Top with the shredded chicken, mozzarella cheese, oregano, and crushed red pepper if desired.

Baking

  • Bake the pizza for about 15-20 minutes or until the crust is golden brown and the cheese is bubbling.
  • Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before slicing.
