Main Ingredients

  • 1 cup fresh ricotta cheese Make sure to drain any excess liquid.
  • 1/2 cup almond flour Do not pack tightly when measuring.
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 teaspoon baking powder
  • a pinch pinch salt
  • optional to taste powdered sugar for dusting For serving.

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, combine the ricotta cheese, almond flour, sugar, eggs, vanilla extract, almond extract, baking powder, and salt. Use a spatula or whisk to blend the ingredients until smooth and well-combined.
  • Once the mixture is creamy, let it sit for about 5 minutes. This allows the almond flour to absorb some of the moisture and helps the pillows become fluffier.

Baking

  • Using a spoon or cookie scoop, drop generous tablespoons of the batter onto the prepared baking sheet, leaving some space between each one as they will spread slightly while baking.
  • Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the tops look set.
  • Allow the pillows to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Serving

  • If desired, dust with powdered sugar before serving.

Notes

Serve with fresh fruit, whipped cream, or a drizzle of honey for added flavor. For storage, keep in an airtight container at room temperature for up to two days or refrigerate for about a week. They can also be frozen for up to three months.
