Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Ensure it is at room temperature.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs At room temperature.
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon red food coloring Adjust amount as desired for color.

For the Cheesecake Filling

  • 8 oz cream cheese, softened At room temperature.
  • 1/2 cup powdered sugar

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Incorporate the vanilla extract and red food coloring, blending until fully combined.
  • In another bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring until a dough forms.

Making the Cheesecake Filling

  • In a separate bowl, mix the softened cream cheese and powdered sugar until smooth and creamy.

Assembling and Baking

  • Scoop out a tablespoon of the red velvet dough and flatten it in your hand.
  • Place a teaspoon of the cheesecake filling in the center, then wrap the dough around the filling to create a ball.
  • Repeat the process and place each cookie ball on the prepared baking sheet, spacing them about two inches apart.
  • Bake the cookies for 10 to 12 minutes, or until the edges are set.
  • Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
