  • 2 large eggs Room temperature for better mixing
  • 1/2 cup vegetable oil
  • 1 cup chocolate chips Or white chocolate chips for a twist
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar For coating

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  • In a large mixing bowl, combine the red velvet cake mix, eggs, and vegetable oil. Mix well until a dough forms.
  • Stir in the chocolate chips and vanilla extract until evenly distributed throughout the dough.
  • Use a cookie scoop or tablespoon to scoop out portions of dough and roll them into balls, about 1 inch in diameter.
  • Roll each ball in powdered sugar until fully coated and place them onto the prepared baking sheet, leaving space for spreading.
  • Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers remain slightly soft.
  • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
