Preparation

  • Gather all ingredients for easy preparation.
  • Melt the butter in a large pot over medium heat.
  • Add the chopped onions and sauté for about 5 minutes until softened.
  • Mix in the minced garlic and let it sauté for an additional minute.

Cooking

  • Add the diced red potatoes to the pot and pour in the broth.
  • Increase the heat until the mixture boils, then reduce to a simmer.
  • Cook until the potatoes are tender, about 15 to 20 minutes.

Finishing Touch

  • Use an immersion blender to puree the soup to your desired consistency.
  • Stir in the heavy cream and season with salt and pepper.
  • Remove from heat and ladle into bowls, garnishing with chopped chives.
