Ingredients
  

  • 2 1/2 cups All-purpose flour
  • 1 1/2 cups Granulated sugar
  • 1 teaspoon Baking soda
  • 1 teaspoon Cocoa powder
  • 1 teaspoon Salt
  • 1 cup Vegetable oil
  • 1 cup Buttermilk
  • 2 Large eggs
  • 2 tablespoons Red food coloring
  • 1 teaspoon Vanilla extract
  • 1 tablespoon White vinegar
  • 8 oz Cream cheese
  • 1/2 cup Unsalted butter
  • 4 cups Powdered sugar
  • 1 teaspoon Vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt.
  • In a separate bowl, whisk together the oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar.
  • Gradually add the wet ingredients to the dry ingredients, mixing until combined.
  • Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  • To make the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla, mixing until smooth and fluffy.
  • Once the cakes have cooled, frost the top and sides with the cream cheese frosting.

Notes

Feel free to customize the frosting or even add additional flavorings to the cake. You can also experiment with different food coloring for a fun twist!
