Ingredients
  

Base Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup rolled oats (old-fashioned)
  • 1/2 cup packed light-brown sugar
  • 1/2 cup unsalted butter, softened

Filling

  • 3/4 cup raspberry jam (seedless if preferred)

Instructions
 

Preparation

  • Preheat your oven to 350 degrees Fahrenheit.
  • Prepare an 8 by 8-inch baking dish by lining it with aluminum foil and greasing it lightly.
  • In a large mixing bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Stir in the rolled oats and light-brown sugar, using hands or a fork to break up clumps.
  • Add the softened unsalted butter to the mixture and work it in until evenly moistened.
  • Press 2 cups of this oat mixture firmly into the bottom of the prepared baking dish.
  • Spread the raspberry jam evenly over the oats, leaving a 1/4-inch border.
  • Sprinkle the remaining oat mixture over the jam layer and gently press it down.

Baking

  • Place the dish in the oven and bake for 34 to 38 minutes or until golden brown.
  • Once baked, allow the dish to cool completely before cutting the bars.

Serving

  • Lift the bars out of the dish using the foil overhang and cut into squares.
  • Store leftovers in an airtight container.
