Preparation

  • Heat the olive oil in a non-stick skillet over medium heat.
  • Add the chopped onion and bell pepper to the skillet. Sauté for about 5 minutes or until softened.
  • Toss in the diced tomato and jalapeño. Cook for another 2-3 minutes until tender.
  • In a bowl, crack the eggs and whisk until well blended, then season with salt and pepper.
  • Pour the whisked eggs into the skillet with the vegetables, gently stirring as they begin to cook.
  • Continue to stir until the eggs are softly scrambled and cooked to your liking, about 2-4 minutes.
  • Sprinkle the shredded cheese over the eggs, allowing it to melt slightly.
  • Remove from heat and garnish with chopped cilantro before serving.
