Ramen Vegetable Stir Fry

Ingredients
  

For the sauce

  • 1/2 cup low-sodium soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons sweet Thai chili sauce
  • 1 tablespoon maple syrup
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon red pepper flakes Adjust to taste for spiciness

Main ingredients

  • 6 ounces ramen noodles About 2 blocks
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup chopped onion
  • 1/2 cup chopped red pepper
  • 2 1/2 cups broccoli florets
  • 4 ounces sugar snap peas

Instructions
 

Preparation

  • In a small bowl, mix together the low-sodium soy sauce, lime juice, sweet Thai chili sauce, maple syrup, ground ginger, and red pepper flakes until smooth and set aside.
  • Bring about 4 cups of water to a boil in a medium-sized pot. Once boiling, add the ramen noodles and cook for about 4-5 minutes or until tender. Drain and set aside.

Cooking

  • Heat sesame oil in a skillet over medium-high heat. Add minced garlic, chopped onions, red pepper, broccoli florets, and sugar snap peas. Stir gently for about 5 minutes, until the vegetables are tender yet vibrant.
  • Reduce the heat to low and stir in the prepared sauce. Allow to bubble and thicken for around 3 minutes.
  • Add the cooked ramen noodles to the skillet and gently stir until everything is well coated with the sauce. Serve warm.

Notes

For extra flavor, consider garnishing with sesame seeds or chopped cilantro. This dish pairs well with pickled vegetables or a tangy cucumber salad.
