Quick Salmon & Spinach Pasta

  • 8 ounces pasta (spaghetti, fettuccine, or penne) Choose your preferred type of pasta
  • 2 tablespoons olive oil
  • 1 pound salmon fillets, skinless and boneless
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes Optional for added heat
  • Salt to taste Salt, to taste
  • Black pepper to taste Black pepper, to taste
  • 1/4 cup freshly grated Parmesan cheese More for serving if desired
  • 1 Juice of 1 lemon
  • Fresh parsley, chopped For garnish

Instructions
 

Preparation

  • Begin by bringing a large pot of salted water to a boil. Add your choice of pasta and cook according to the package instructions until al dente. Reserve about a cup of pasta water before draining.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Season the salmon with salt and black pepper. Once the oil is hot, add the salmon fillets and sear them for about 4-5 minutes on each side until they are cooked through and easily flake with a fork. Remove the salmon from the skillet and break it into chunks using a fork.
  • In the same skillet, add the minced garlic and red pepper flakes (if using). Sauté for a minute until fragrant, taking care not to burn the garlic.

Cooking

  • Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.
  • Combine the cooked pasta with the spinach and garlic in the skillet. If the mixture seems dry, add a little reserved pasta water to create a luscious sauce.
  • Toss in the flaked salmon, lemon juice, and half of the Parmesan cheese. Stir everything gently to combine. Adjust seasoning with salt and black pepper to taste.
  • Serve immediately, garnished with the remaining Parmesan cheese and chopped parsley.

Notes

For a creamy sauce, consider adding a splash of heavy cream or crème fraîche. Adjust the recipe based on your taste preferences, such as adding more garlic or spices.
