Ingredients
  

Main Ingredients

  • 1 pound salmon fillet, skin removed Ensure salmon is fresh for best flavor.
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs Beaten
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice Freshly squeezed
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper to taste
  • Cooking oil (for frying) Enough to cover the bottom of the skillet

Instructions
 

Preparation

  • Cut the salmon into bite-sized pieces, roughly 1-inch cubes.
  • Season the salmon pieces with salt and pepper.
  • In a shallow bowl, add the flour.
  • In another bowl, beat the eggs, then stir in the minced garlic, lemon juice, and chopped parsley.
  • Place the panko breadcrumbs in a third bowl.
  • Dredge each salmon piece first in the flour, shaking off any excess.
  • Dip it into the egg mixture, letting the extra drip off.
  • Coat it evenly with panko breadcrumbs.

Cooking

  • In a skillet, heat enough oil over medium heat to cover the bottom.
  • Once hot, add the salmon bites in a single layer, leaving space between each piece.
  • Cook for 3-4 minutes per side or until golden brown and cooked through.
  • Remove and place on paper towels to drain excess oil.
  • Serve hot with your favorite dipping sauce.

Notes

For added flavor, experiment with spices or cheese in the panko. These can also be prepared in advance and frozen.
