Ingredients
  

For the Soup Base

  • 2 tablespoons sesame oil
  • 1 bunch green onions, sliced (white and green parts separated)
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 8 cups chicken broth Use low-sodium for less saltiness

For the Wontons

  • 12 to 16 pieces wontons (store-bought or homemade)

For the Greens

  • 1 cup baby spinach Adds color and nutrition

For Seasoning

  • soy sauce and pepper to taste

Instructions
 

Preparation

  • Grab a large pot and heat the sesame oil over medium heat.
  • Once the oil is warm, toss in the white parts of the sliced green onions, minced garlic, and freshly grated ginger. Sauté for about two minutes until fragrant.
  • Pour in the chicken broth and bring the mixture to a boil.

Cooking

  • Gently add the wontons to the pot. Cook for about 5-6 minutes if using store-bought wontons.
  • Add the baby spinach and stir until it wilts down, about one minute.
  • Season the soup with soy sauce and freshly ground pepper to taste.
  • Serve hot, garnishing with the green parts of the green onions.

Notes

Store leftovers in an airtight container, refrigerate for up to three days, and reheat over medium-low heat. For longer storage, freeze broth and wontons separately for up to three months.
