Ingredients
  

For the cookies

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon allspice
  • 1/4 teaspoon salt

For the cream cheese frosting

  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk, as needed to adjust frosting consistency

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the pumpkin puree, eggs, and vanilla extract until well combined.
  • In another bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, allspice, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Baking

  • Bake for 12-15 minutes, or until the edges turn golden and the centers are set.
  • Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Frosting

  • While the cookies cool, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter together until smooth.
  • Gradually add in the powdered sugar, mixing until combined.
  • If the frosting is too thick, add a tablespoon or two of milk to reach your desired consistency.
  • Stir in the vanilla extract.
  • Once the cookies are completely cool, frost each cookie generously with the cream cheese frosting.
