Ingredients
  

For the Brownie Batter

  • 3/4 cup unsalted butter (melted) Ensure butter is melted and cooled slightly.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs Room temperature preferred.
  • 1/2 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon

For the Cheesecake Layer

  • 8 ounces cream cheese (softened) Ensure cream cheese is at room temperature.
  • 1 large egg Room temperature preferred.
  • 1/3 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup canned pumpkin
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 teaspoon pumpkin spice

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C). Grease an 8x8 inch baking pan and line it with parchment paper.
  • In the bowl of your mixer, combine the melted butter, sugar, and vanilla extract. Mix well.
  • Add the eggs into the mixture and continue beating until light and fluffy.
  • In a separate bowl, whisk together the flour, cocoa powder, salt, and cinnamon. Gradually add to the wet mixture, combining until smooth.

Cheesecake Layer

  • In another large bowl, beat the softened cream cheese until smooth. Add one egg, sugar, and flour to the cream cheese and mix well.
  • Incorporate the canned pumpkin, vanilla extract, cinnamon, and pumpkin spice until smooth.

Assembly

  • Spread approximately 2/3 of the brownie batter in the prepared baking pan.
  • Spread the pumpkin cheesecake batter over the brownie layer.
  • Drop spoonfuls of the remaining brownie batter over the cheesecake layer.
  • Using a knife or skewer, gently swirl the brownie and cheesecake batters together.

Baking

  • Bake in the preheated oven for 40 to 50 minutes. The center should be set but still moist.
  • Remove from the oven and cool completely on a wire rack. For best results, chill in the refrigerator before cutting.

Notes

Serve with caramel sauce or powdered sugar, and pair with vanilla ice cream or whipped cream for added indulgence. Can also freeze brownies wrapped individually for up to three months.
