Ingredients
  

  • 1 rotisserie chicken breast (or 2 cups cooked chicken)
  • 1/2 cup barbecue sauce
  • 1/4 cup chicken broth
  • 2 Tbsp. white vinegar
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • 1/4 cup brown sugar
  • 12 Hawaiian rolls (or 4 hamburger buns)
  • 3 Tbsp. butter
  • 3 slices cheddar cheese

Instructions
 

  • Break the rotisserie chicken into smaller portions or use pre-cooked chicken.
  • In a large pan, combine barbecue sauce, chicken broth, white vinegar, garlic powder, salt, and black pepper. Whisk to create a smooth sauce.
  • Add the cooked chicken to the pan and heat over medium-low for 5-10 minutes until warmed through.
  • Remove chicken and shred using two forks. Stir brown sugar into the sauce until melted, then return shredded chicken to the pan and coat with sauce.
  • Slice Hawaiian rolls in half and spread butter on the insides. Broil in the oven until golden brown.
  • Assemble the sandwiches with shredded chicken on the bottom rolls, topped with cheddar cheese, and cover with the top half of the roll.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or microwave.
