Ingredients
  

Pastry

  • 2 sheets sheets of puff pastry Thawed if previously frozen.

Filling

  • 2 cups fresh spinach, chopped Can be substituted with frozen spinach if drained well.
  • 1 cup ricotta cheese
  • 1 cup feta cheese, crumbled Can substitute with other cheeses like goat cheese.
  • 1 large egg, beaten For binding the mixture.
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon olive oil For sautéing the onion and garlic.
  • 1 teaspoon dried oregano or dill Optional.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat the olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until translucent and fragrant.
  • Stir in the chopped spinach, cooking until wilted. Remove from heat and allow to cool slightly.
  • In a bowl, combine the ricotta, feta, beaten egg, salt, black pepper, and dried herbs if using. Mix well.
  • Add the spinach mixture to the cheese mixture, stirring until combined.
  • Roll out one sheet of puff pastry on a lightly floured surface. Place it into a greased pie dish, allowing the edges to hang over.
  • Pour the filling into the pastry-lined dish, spreading it evenly.
  • Roll out the second sheet of puff pastry and cover the filling. Seal the edges by crimping with a fork or fingers.
  • Use a sharp knife to cut a few slits in the top for steam to escape.
  • Brush the top with any remaining beaten egg for a golden finish.

Baking

  • Bake in the oven for 30-35 minutes or until the pie is golden brown and puffed.
  • Let it cool slightly before serving.

Notes

To keep puff pastry chilled while working with it, place it in the fridge if it becomes too soft. Drain excess moisture from the spinach mixture to avoid a soggy filling. The pie can be served warm or at room temperature.
