Ingredients
  

Dough Ingredients

  • 1 cup whole wheat or gluten-free flour Choose gluten-free flour if desired
  • 1/2 cup protein powder Flavor of your choice
  • 1/4 cup coconut oil or unsalted butter Melted
  • 4 tablespoons honey or maple syrup For sweetness
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup milk of choice Dairy or non-dairy

Filling Ingredients

  • 1/2 cup fruit preserve or nut butter For filling

Optional Toppings

  • sprinkles, chocolate chips, or icing made from powdered sugar and milk For garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the flour, protein powder, and salt. Whisk them together until there are no lumps.
  • Melt the coconut oil or butter and mix it with the honey or maple syrup and vanilla extract in a separate bowl.
  • Add the wet ingredients to the dry mixture and mix well. Gradually add the milk until the dough comes together. It should be firm but not sticky.
  • Roll the dough out on a floured surface to about 1/4 inch thick. Use a pizza cutter or knife to cut rectangles out of the dough, aiming for a size of around 3×4 inches for each piece.

Assembly and Baking

  • Lay half of the dough rectangles on the prepared baking sheet. Spoon a small amount of the fruit preserve or nut butter onto the center of each rectangle.
  • Top with the remaining rectangle pieces. Press the edges with a fork to seal them and poke a few holes on top to allow steam to escape during baking.
  • Bake the pop tarts for 15-20 minutes or until golden brown.
  • Allow them to cool for a few minutes before topping with optional icing or toppings, if desired.

Notes

Store leftovers in an airtight container at room temperature for up to three days; refrigerate for up to a week, or freeze for up to three months. Reheat as desired.
