Ingredients
  

Wet Ingredients

  • 1 cup plain Greek yogurt Use high-quality, thick Greek yogurt for the best results.
  • 1/2 cup natural sweetener (like honey or maple syrup) Adjust according to your sweetness preference.
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup whole wheat flour Can be swapped for almond or oat flour.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Mix-ins (Optional)

  • 1/2 cup chocolate chips or dried fruit
  • 1/4 cup chopped nuts Consider lightly toasting for extra flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  • In a mixing bowl, combine the Greek yogurt, natural sweetener, egg, and vanilla extract. Whisk until smooth.
  • In a separate bowl, mix the whole wheat flour, baking soda, baking powder, and salt.
  • Gradually combine the dry ingredients with the wet ingredients, stirring until just combined. Avoid overmixing.
  • If desired, fold in chocolate chips, dried fruit, or nuts.
  • Scoop the dough onto the prepared baking sheet, spacing them about two inches apart.

Baking

  • Bake for 12-15 minutes or until the edges turn lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
